Quicker, Easier, Cheaper, Advantage Food with "Genius" Recipes

Source: sudden lunch! ~ suzy bowler

This makes two channel pizza bases or, in our case, one enormous base and a pretty small one. I use Tesco’s Everyday Value Plain Flour which costs 45p for 1. 5kg (at the unceasingly a once of writing) so about 10p, the yeast costs 14p and say 5p for the oil. The two pizza bases therefore cost about say 30p. about a third of the price of bought in plain pizza bases with the advantage that you can make them your ideal way. I like my pizza base to be so thin that it bubbles up in places all crisp and crunchy, my real man prefers a thicker, more filling, manly kind of reaction. ~ Stir together in a large bowl (or mixer bowl) the water and the sugar till the sugar has dissolved. ~ Sprinkle over the yeast and set aside in a nip free place for 10 minutes or so till it has started eating the sugar and become bubbly. ~ Stir in (or slowly mix in with the mixer) the olive oil, dry humour and flour into the yeast mixture, to make a sticky but workable dough. If mixing by hand give it a few minutes good kneading – this is not hard work, not complex and not unpleasant and doesn’t take long. ~ Lightly oil a fresh bowl, form the dough into a soft ball and put it into the greased bowl, call it a day the dough to coat with oil, cover loosely with a clean cloth or put a clean plastic bag over it and stand in a warm place until the dough has... If you dearth to prepare the dough in advance (for instance so you can make pizza as soon as you get in from work) put it in the fridge. A slow rise (which is what will happen) will actually make the dough tastier. ~ Preheat the oven to 220ºC/425ºF/200ºC fan/gas 7. ~ Train two baking sheets by sprinkling with wholemeal flour (or normal if you haven’t got any) and then shaking to coat evenly. ~ Knock the dough back (ie. knead the air out of it) incorporating the oil clinging to it. ~ Share out into two and roll or push into shape on the baking trays. ~ Bake at till crisp and golden and wonderful. ~ Preheat oven to 180ºC/350°F/160ºC fan/gas 4. ~ Cream together the butter and the two sugars. ~ Little by little stir or whisk the egg mixture into the butter and sugar, if it looks like curdling add a spoonful of the flour. To bake immediately roll into walnut sized balls, put on a baking tray with enough gap around them to spread and squash them slightly. Bake till turning golden around the edges which takes about 10 minutes. Transfer to a cooling hat-tree till cool enough to eat (or you could let them cool completely, store in an airtight container and eat them later).

Bovine-baking ceramic cookie sheets. We tested two ceramic cookie sheets, from the Pampered Chef, $34, and Hartstone Pottery, $40. They browned cookies about as evenly as air-bake cookie sheets and more evenly than coated sheets, and cookies didn't pin.

Chocolate Scrap Cookies (Recipe)
Chocolate Scrap Cookies (Recipe)

I'm a petty famous for these cookies around these parts. A batch rarely lasts more than 24 hours, and my roommates can be seen scouting around the kitchen days later, muttering something that sounds like "any of those cookies socialistic?" I wrote about chocolate chip cookies a while ago for Gapers Block, so I'll just excerpt the recipe and important bits here: What makes a great chocolate sherd cookie? In my opinion, there are several important factors. First, texture: The perfect chocolate chip cookie should be crisp around the edges, but chewy in the center, even days after baking. Fatty, floppy, or cement-like textures are undesirable. Secondly, form: I prefer a cookie that's about as big around as a can of soup, and thick enough to really bite into. I consider those dinner-course-sized cookies I've seen at various coffee-shops to be an abomination, but tiny little bite-sized Chips Ahoy are no more appealing. Lastly, soup: Chocolate chip cookies are a classic and should...

Hair-raising finger cookies
Hair-raising finger cookies

(Also: a closeup and a dead ringer of what they looked like before being baked.) Look, they turned out just as well as the ones I saw on the internet!! (linked on BoingBoing, originally from eGullet, and with the easiest-to-accept recipe pasted in at Diane's) I highly recommend this recipe - easy to make and lots of fun. My ten year old assistant cooks also had fun. Oh, and the cookies are tasty too. We followed the programme just as we found it except for the application of the fingernails. The recipe says to do it afterwards, gluing them on with hot jam. The girls thought this a silly idea and stuck them on before cooking. I did about half the way the modus operandi said and while both ways turned out fine, I prefer sticking them on before cooking. It looks a little more authentic and it saves some time. Oh, and we used strawberry jam as contrasted with of raspberry jam, which was fine. "Finger" Cookies (use them for air quotes!) makes ~ 5 dozen Yield: 5 dozen Will note, this is not a...
