Chocolate Break in Cookies (Recipe)
Chocolate Break in Cookies (Recipe)

I'm a dollop famous for these cookies around these parts. A batch rarely lasts more than 24 hours, and my roommates can be seen scouting around the kitchen days later, muttering something that sounds like "any of those cookies socialistic?" I wrote about chocolate chip cookies a while ago for Gapers Block, so I'll just excerpt the recipe and important bits here: What makes a great chocolate token cookie? In my opinion, there are several important factors. First, texture: The perfect chocolate chip cookie should be crisp around the edges, but chewy in the center, even days after baking. Sebaceous, floppy, or cement-like textures are undesirable. Secondly, form: I prefer a cookie that's about as big around as a can of soup, and thick enough to really bite into. I consider those dinner-layer-sized cookies I've seen at various coffee-shops to be an abomination, but tiny little bite-sized Chips Ahoy are no more appealing. Lastly, drop: Chocolate chip cookies are a classic and should...

Crawly finger cookies
Crawly finger cookies

(Also: a closeup and a sketch of what they looked like before being baked.) Look, they turned out just as well as the ones I saw on the internet!! (linked on BoingBoing, originally from eGullet, and with the easiest-to-keep up with recipe pasted in at Diane's) I highly recommend this recipe - easy to make and lots of fun. My ten year old assistant cooks also had fun. Oh, and the cookies are tasty too. We followed the modus operandi just as we found it except for the application of the fingernails. The recipe says to do it afterwards, gluing them on with hot jam. The girls thought this a silly idea and stuck them on before cooking. I did about half the way the procedure said and while both ways turned out fine, I prefer sticking them on before cooking. It looks a little more authentic and it saves some time. Oh, and we used strawberry jam in lieu of of raspberry jam, which was fine. "Finger" Cookies (use them for air quotes!) makes ~ 5 dozen Yield: 5 dozen Choose note, this is not a...

Coffee-chocolate shortbread cookies
Coffee-chocolate shortbread cookies

Method from Smitten Kitchen: Espresso-Chocolate Shortbread Cookies. They were mouth-watering! Makes 32 cookies 1 tablespoon instant espresso privilege (I used instant coffee and it worked fine) 1 tablespoon boiling water 2 sticks (8 ounces=225 g) unsalted butter, at accommodation temperature 2/3 cup (=160 g) confectioners’ sugar 1/2 teaspoon pure vanilla extract 2 cups (=475 g) all-purpose flour 4 ounces bittersweet chocolate (heath, or a toffee variety), finely chopped, or 3/4 cup store-bought mini chocolate chips (=120 g to 180 g) Confectioners’ sugar, for dusting (facultative) 1. Dissolve the espresso in the boiling water, and set aside to cool to tepid. 2. Working with a stand mixer, preferably fitted with a oar attachment, or with a hand mixer in a large bowl, beat the butter and confectioners’ sugar together on medium speed for about 3 minutes, until the miscellany is very smooth. Beat in the vanilla and espresso, then reduce the mixer speed to low and add the flour, mixing only until it...
