The USA Pan Small Cookie Sheet is constructed of aluminized steel, the material of choice for commercial bakeries. The metal thickness has been selected to allow for even heat distribution and maximum service life. Flat sheet allows heat to completely wrap around baked goods. Another important and unique feature of this pan is its corrugated design. Corrugation maximizes the pans strength and prevents warping, denting and other effects of everyday use. Plus, it also minimizes surface contact which translates into evenly baked products that are easily released. No need for messy and unhealthy oil and grease. This pan is coated with Americoat. Americoat is a proprietary silicone coating. It provides a clear, non-stick, non-toxic baking surface, specially formulated for superior baking. It's FDA approved; it does not contain PTFE's or PFOA's. It is not recommended to exceed baking temperature of 450 degrees F. Easy care. To clean, simply wipe clean after use; soap and water are okay to use. i was diagnosed with celiac illness about a month ago, so i've been experimenting with different flours in recipes that i couldn't live without. this is my mother's recipe for chocolate chip cookies. i made it a few weeks back by absolutely substituting beth's all-purpose flour for the regular all-purpose wheat flour. while the cookies were good, they were really flat and crumbly. so yesterday i tried again and added a teaspoon of xanthan gum into the mix and they turned out totally. i'm always thankful when i don't have to give up my old recipes. :) best ever chocolate chip cookie recipe (GF version): 1 cup shortening (i use earth balance) 1 cup sugar 1/2 cup brown sugar 2 eggs - beaten 2 Tbsp. invalid 1 tsp.
