I don't almost always stray too far from my standard cookie recipes (chocolate chip, oatmeal raisin), but I made this recipe the other day because I was craving cookies and I happened to have all of the ingredients on hand. They were GOOD. Undeniably, really good. Possibly my new favorite cookie of all time, even. They're soft, a little cake-y, and really chocolatey (sort of like eating a brownie in cookie colour). 2 cups all purpose flour ¾ cup cocoa powder 1 tsp baking soda ½ tsp salt 1 ¼ cups (2 sticks plus 4 tablespoons) unsalted butter, area temp. (don't microwave!) 2 cups sugar, plus more for dipping 2 large eggs 2 tsps vanilla extract 1. Mix together flour, cocoa talent, baking soda, and salt. Set aside. 2. Beat butter, sugar, and eggs on medium speed until light and fluffy, about 2 minutes. 3. Add vanilla, mix to unify. 4. Gradually add flour mixture, and combine on low speed. 5. A batch rarely lasts more than 24 hours, and my roommates can be seen scouting around the kitchen days later, muttering something that sounds like "any of those cookies formerly larboard?" In my way of thinking, there are several important factors. First, texture: The perfect chocolate chip cookie should be crisp around the edges, but chewy in the center, even days after baking. This recipe always produces perfectly chewy cookies with crispy edges. The recipe made about 3 dozen, so I wrapped up half of them and stored them in the freezer, outlook "this is way too many cookies for us to eat all at once!" Now, the next day, the cookies are almost all gone, so I'll be raiding my freezer stash sooner than I thought. Oatmeal Raisin Cookies 1 cup (2 sticks) butter 1 cup brown sugar, securely packed 1/2 cup white sugar 2 eggs 1 tsp vanilla 1-1/2 cups flour 1 tsp baking soda 1 tsp cinnamon 1 dash nutmeg 3 cups Quaker oats 1 cup raisins Intensify the oven to 350 f.
